Petit chablis is at the lowest end of the Chablis appellation classification. The most prized are the seven grand cru sites but that doesn't mean petit chablis isn't enjoyable — it's just uncomplicated. Simonnet-Febvre is an old and respected producer. This wine — under screw cap — reveals fine, lemony acidity, oyster shell and honeysuckle notes, with a soft, round palate. It's ultra-fresh, vibrant and pristine.
