First look: Inside The Goods Wholefoods salad bar and cafe in Civic

Not really a fan of salad? Klarisa Cengic thinks she can change your mind.

The co-owner of Eighty Twenty Food in Braddon is opening new venue The Good Wholefoods, a salad bar and wholefoods cafe, in Civic's No Name Lane.

"The biggest thing for me here is I want people to think, 'damn, that was such a good salad'," Cengic said.

"People tell me 'I'm not much of a salad eater'. Well I can make you a bit of a salad eater. When they think of salads they think of a garden salad and that's really boring - it's a garnish. I want to show people what real salads are; what healthy, good for you, nourishing kind of salads are."

The rotating menu of plant-based salads will be made fresh daily, and filled with vegetables, herbs and spices.

"They're really good for you, but far better than your average salad, full of 'The Goods'. So lots of vegies, not just bulked out with greens," Cengic said.

The base salads will be predominantly gluten-free, vegetarian, vegan and dairy-free, although some will have cheese from time to time. A few salads will come with dressing, and a range of dressings will also be available on the side. You can then also add on protein - free range chicken, dill baked salmon, falafel, egg or hummus.

In the morning, there are build your own breakfast bowls ($6.50-$9.50) with bircher, chia pudding, yoghurts, museli, granola, fruit and nut butters. There is a menu of toasts and toppings ($9), ranging from avocado and pea smash with chili and fetta to ricotta, strawberries, flakes almonds and orange zest.

The drinks menu includes a range of smoothies, and coffee from Sydney's Gabriel Coffee.

The airy, relaxed venue was fitted out by Cengic's boyfriend and co-owner Matt Sullivan, who is a builder. It seats around 15 people inside at benches, with room for around 30 outside on large communal tables.

The cafe opens its doors this week, and will open 6.30am-6pm Monday to Friday, and a half day on Saturday.
