The Bondi butcher where you select a steak and they cook it for you has just opened at the Pacific Bondi development on Campbell Parade. After test-driving Macelleria as a tiny shopfront operation where customers snapped up meat from the same producers that supply many of our premium restaurants - but at much lower prices - Macelleria now faces the same issues as the restaurants it competed against. It has relocated to larger, more expensive premises.

Co-owner Peter Zaidan [pictured with business partner Andy Anthony] argues he'll be able to maintain the lower price point through increased volume. The room is certainly smarter than its old digs, rich in subway tiles and murals. Marcelleria customers don't live on steak alone, the soon to be expanded menu set to eventually include a fish option. "I've also got a new burger, the Doppio, which is my version of a Big Mac. I've been working on it for the past 15 years," Zaidan says.
