Bubble-O-Bill waffles anyone? The Kingston Collective opens at Kingston Foreshore

Brand new at the Foreshore is the Kingston Collective – an eatery and bar with a bit of something for everyone.

Owners Alayna and Troy are also the couple behind Braddon's Knightsbridge Penthouse.

The venue is split into three dining areas – a casual and more formal area inside with table service, and an outdoor area looking out onto the pier where you order at the counter.

In the kitchen, they've brought up head chef Josh Bell from the Pantry in Melbourne. Alayna describes the seasonal menu as modern Australian, using lots of Australian spices.

The easy highlight of the all-day brunch menu is the Bubble-O-Bill Waffle, a version of the childhood classic on a plate. There's also everything from acai bowls to eggs benedict, with dishes including fish tacos, beef cheek ragu and a superfood salad for lunch.

The dinner menu is a mix of share plates, mains and pizzas, with the most expensive item on the menu the scotch fillet for $30.

Drinks are a mix of local and imported beers and wines, plus a cocktail menu that's a nod to Knighty.

And they've tried to really cater for everyone. There are lots of gluten free, vegetarian and vegan options on the menu, plus a kids' menu. There's a row of seats with USB and powerpoint access for those working outside the office. Even pooches are catered for outside with water bowls.

The eatery is also offering home delivery to any address at the Kingston Foreshore, with orders via the phone.
