Winter? So over. Head to new St Kilda pan-Asian offering Spring and Summer for a bowl of noodles and floral cocktail – 'tis the season.

Head chef and co-owner Peevasut "Golf" Laovanich draws on his Thai heritage and three years working at Chin Chin, Kong BBQ and Hawker Hall with a sharp menu of shareable Thai classics with a Japanese and Korean influence.

"There's no hero dish," Golf says, "It's like a festival on a table where you can have a little bit of this and a little bit of that and it all goes together."

That said, a kingfish sashimi of with a lick of green nam jim and coconut cream is on high rotation, likewise a tricked-up king prawn pad Thai of charred flat rice noodles with crunchy dried turnip, crushed peanuts, sprouts and tofu.

There are a couple of envelope pushing dishes too: a coriander salad is fistfull of the pungent herb tossed with spicy nam prik chilli jam, "some people are going to hate it," Golf says, and the fried rice will contain whatever is on hand (not soggy peas or frozen shrimp).

Even the decor has a summer feel, co-owner Jessica Suwanasilp designed the 50-seat space herself. What was once a dark and dingy Irish pub is a light and airy split level dining room with a combo of blondewood stools and low tables.

Perch at the long marble bar to sip pints of Kirin or cocktails laced with sake and cherry liqueur.
