You don't even need to brush the sand from your feet to eat at Paper Fish.
The fish and chip kiosk is built into a corner of the imposing beachside building that will soon house Pontoon and Stokehouse – stroll right off the St Kilda beach boardwalk and order from the window.
Stokehouse head chef Ollie Hansford has overseen the Paper Fish menu, which offers things like grilled or tempura fish (flathead, blue grenadier, gummy or salmon), fritto misto, crinkle-cut chips dashed with a secret seasoning, and sweet potato and Japanese potato cakes.
Served in recyclable packaging custom-designed by Beci Orpin, the food is available to take away or eat at communal tables among the palm trees.
Pontoon, the casual beach-level restaurant, is expected to open in early November, and upstairs, Stokehouse is tipped for a December debut.
The eco-friendly restaurants – designed by architect Robert Simeoni, with interiors by Pascale Gomes-McNabb (Stokehouse) and George Livisiannis (Pontoon and Paper Fish) – replace a historic building that burnt down in January 2014.
Paper Fish is open daily noon-late throughout daylight savings.
