Adam Liaw's hit list for the Sydney Night Noodle Markets

Sydneysiders, this weekend is your last chance to hit the Night Noodle Markets for 2016, and who better to guide your choices than Asian cuisine guru Adam Liaw?

So what does the MasterChef winner, who has carved a career from cooking, sharing and travelling in search of the best of Asian street food, think of Sydney's bustling event?

"The Night Noodle Markets are great. Street food is one of the things I miss most from my travels," he said.

"[The markets] bring that vibrancy of street food to Sydney. Australians have such a strong connection to Asian food and how it's consumed."

Ahead of his appearance on the Good Food stage this Saturday at 6.15pm, he shares his plan of attack of what to eat at the markets.

1. Peking duck fries, One Tea Lounge and Lounge

"The first thing I'm going for is the loaded fries with Peking duck - I've heard so many people talking about them, so I can't wait to try them," he says.

2. Liempo, Hoy Pinoy

What is liempo? The dudes behind Hoy Pinoy describe it as "Asian bacon", doused with adobo sauce and smoked for 12 hours.

"I just got back from the Philippines, so I'm on a big Filipino food kick at the moment. The liempo from Hoy Pinoy is definitely on my list, as well as their pork skewers."

3. Fryer and Ice, Messina Gelato

Yep, even food celebrities aren't immune to the charms of Messina.

"Fried ice-cream is my favourite thing in the world," Liaw says. "So this ice-cream is on my list."

This version isn't your suburban Chinese restaurant special; here, it's presented as deep-fried caramel and coconut gelato, mango pudding and passionfruit caramel.

4. Octodog, Harajuku Gyoza

Adam is about to launch his fifth cookbook, The Zen Kitchen: Easy Japanese Recipes for Home Cooks ($49.95, Hachette), and said these little sausage creations remind him of Japan.

"Cutting the sausage like that is a common lunchbox thing, so I'll definitely get one for my son."

5. Singapore Chilli Crab Lobster Roll, Bao Stop

It's the old food writer test: how would it go on a sandwich?

"I really want to try the chilli crab lobster roll. Taking something delicious and putting on buttered bread is always a recipe for success."
