CBD hotel splashes $15 million on new restaurants

A gob smacking $15 million is quietly being splashed on three venues opening at Circular Quay in March. With the Quay undergoing unprecedented hospitality growth, Sydney Harbour Marriott is trying to shake up the hotel restaurant genre.

Or, in its words, "reimagining traditional expectations surrounding hotel restaurants and bars."

What does $15 million buy? A 120-seat restaurant, Silvester's, which will have a strong focus on sustainability. Three Bottle Man, a cafe by day and wine-cocktail bar by night on Bulletin Place laneway. And throw in a revamp and extension of Customs House Bar.
