Heading to Dark Mofo in Tassie this June? Hope you've already booked your accommodation – and your dinners.

Along with the Winter Feast program, a flush of young talent has taken over the town.

There's Fico, a pared-back contemporary bistro on Macquarie Street run by co-chefs Oskar Rossi and Federica Andrisani, doing tasting menus with a strong pasta streak. Around the corner, Dier Makr sees ex-Little Drop of Poison chef Kobi Ruzicka doing more big things with little more than a hot plate, while an ex-Everleigh bartender slings sharp mead cocktails.

And come mid-June, the long-awaited Agrarian Kitchen Eatery from Rodney Dunn and Severine Demanet, who also run the stunning Agrarian Kitchen cooking school and farm, will land in New Norfolk.

Tasmanian native Ali Currey-Voumard (ex Cumulus Inc, The Builders Arms Hotel) will head the kitchen, with chef Clinton Gresham (Mamasita, Carribean resto-bar Pretty Mama and most recently O'Connell's Centenary Hotel) Hobart-bound to join her as sous chef.

They'll turn out dishes similar to those that farm guests have experienced: gently smoked roasts and charcuterie, braced by fresh, pickled and preserved produce from the gardens. Guest chefs will also likely do pop-ups in the old Bronte Building.

Correction: the print version of this article named Clinton Gresham as head chef. He will be sous to the very talented head chef Ali Currey-Voumard.
