Chiara, the latest Docklands restaurant from My Kitchen Rules judge Pete Evans, former Fat Duck junior sous chef Gavin Baker and Collins Square developer Lang Walker, is shaping up for a mid-June opening.

The Italian-inspired restaurant joins Bar Nacional and Long Shot at the Collins Square precinct.

George Fowler, from London's Michelin-starred Pollen Street Social, will head the kitchen, with executive pastry chef Shaun Quade in charge of desserts. Zachary Bacon, recently of Mama Baba and the Press Club, will steer front of house.

Chiara's menu will feature rustic but refined dishes such as flatbread pizza, antipasto, house-made mozzarella, specialty pasta and crudo - raw ingredients such as scallops, octopus and beef.

It will be open Monday to Friday for lunch and dinner at 727 Collins Street, Docklands.
