Award-winning Sicilian chef Lino Sauro bound for Olio, Chippendale

Chippendale has snared another international chef, with Singapore's award-winning Sicilian-born Lino Sauro set to swing open the doors at Olio.

With UK celebrity chef Jason Atherton already in residence on Kensington Street, building work at the Old Rum Store on the strip has had Chippers locals speculating on its operator. "The official launch is planned for early next year," Sauro tells Good Food from Singapore.

"The focus will be on seafood. While my background is Sicilian, I use a lot of the spices and influences of North Africa and the Middle East."

If Sauro can deliver on the plate, Olio will be one to watch.

LAVA, the architectural design shop behind the Beijing Water Cube, is crafting the space. The restaurant will include one of Sydney's on-trend accoutrements: a rooftop terrace.
