Chippendale's Ester restaurant to open Surry Hills spin-off

Surry Hills, you've still got it. Chippendale's twin-hatted Ester restaurant will open a spin-off bar-eatery in postcode 2010 later this year.

"We've just lodged the DA. We aren't relocating, it'll be a bar version of Ester," says owner-chef Mat Lindsay.

Last October Good Food reported the award-winning Ester, a one-time Best New Restaurant recipient in The Sydney Morning Herald Good Food Guide, was quietly plotting a new venue in the achingly cool boutique hotel being built next door to the Paramount Pictures building.

The hotel's operator attempted to hose down the story at the time, saying Lindsay had pulled out. But Lindsay has been busy toiling to realise the concept.

"We haven't come up with a name yet, it took us about two years to decide on Ester," he says.

Surry Hills has taken a hit in recent times with some big name closures, Marque and MoVida among them, but Lindsay will fancy his chances in a strip containing heavyweights Longrain and the soon-to-open Chin Chin Sydney.

"When it'll open is the best question ever … hopefully at the end of the year," he says.
