Daisuke Sakai replaces Shinichi Maeda as Sake Brisbane head chef

Outgoing Sake head chef Shinichi Maeda has handed over the baton to Daisuke Sakai.

Sakai has headed north to Brisbane from Melbourne, where he was sushi chef at Melbourne's Sake restaurant, under executive chef Shaun Presland. Sakai spent five years at the Ritz Carlton in Osaka, Japan.

Sakai will put his own imprint onto the Sake menu, so keep an eye out for new dishes.

Maeda has returned home to the ski resort of Niseko in Japan after 11 years in Australia and stints at Sake and Noosa's Wasabi restaurant.
