Andrew Gale, chef and owner of the Duchess of Spotswood cafe, has gone into business with Salvatore Malatesta, who owns cafes St Ali in South Melbourne and St Ali North in Brunswick. Malatesta has bought 50 per cent of Gale's popular Hudsons Road business and employed Gale to run the kitchen of his pumping South Melbourne cafe. ''We are enamoured to have Andy on board,'' Malatesta says. ''I want St Ali to become an institution, and having Andy is one step closer to achieving that.'' Gale will continue to cook some days at the Duchess (as it's affectionately known) and change dishes on the menu in South Melbourne. ''Slowly,'' he says, ''there will be similar dishes to the Duchess,'' referring to the British-influenced menu he cooks there. ''But it's a different demographic, so I don't yet know if they'll be into offal as much as they are in Spotswood.''
