Edible balloons pop up at The Galeries

The edible helium-filled balloon at Alinea restaurant is one of the world's most famous dishes, but given the restaurant is in Chicago it's a long balloon flight for most Sydneysiders.

So the good folk at the Galeries in the Sydney CBD have decided if you can't get to Chicago then the balloon will fly to you.

Christopher The has been engaged to recreate the famed balloon for the Galeries' SpringVention festival kicking off on Thursday, September 7 and running until Sunday, September 10.

"They came to us and asked us if we could do it. It's difficult, but fortunately there are YouTube videos out there," The says.

Where Alinea's balloons are apple-scented and tied with a string made fromdehydrated granny smith apple, the Sydney version will be flavoured with passionfruit, coconut, raspberry and orange.

"We're also playing around with rosewater," he says.

Man does not live on edible balloons alone, so SpringVention promises some other quirky food creations.

The balloons will be in high demand. "They're free," The says.
