First Gordon Ramsay ... now what?

They've worked for Marcus Wareing, Richard Corrigan and Gordon Ramsay in London and now, chef team Angelo and Angela Velante are opening their own place in South Brisbane.

The pair, who met during their apprenticeships at Brisbane's Polo Club in the 1990s, have been working in pub restaurants in Sydney and Melbourne with the Drinx group since returning from London in 2007.

The fit-out at Peel Street Kitchen, beneath Capitol Apartments on the corner of Merrivale Street, should be complete in the next few weeks, says Angelo Velante.

Expect a modern menu that dips into the Velante's Spanish-Polynesian background, with share plates such as Mooloolaba prawns and pork wrapped in achuete dumpling with lemon grass broth and pork rind crumbs, or poached rainbow trout and cucumber salad with pomegranate dressing and pork floss as well as salt bush lamb "adobo". Smaller share plates will be about $20 with mains under $30.

“Our aim is to offer a casual ambience but with impeccable service and over-delivery on the food,” Angelo Velante says.

Peel Street Kitchen is expected to open for breakfast, lunch and dinner in mid-August.
