Set an early alarm on Saturday, April 30. Nadine Ingram, from Sydney's Flour and Stone Bakery, is taking over Tivoli Road Bakery (3 Tivoli Road, South Yarra) for the day, selling her panna cotta lamingtons and strawberry and rosemary brulee tarts from 7.30am until sold out.

Ingram and Tivoli Road owner-baker Michael James go way back: they worked together at the original Bourke Street Bakery in Surry Hills, circa 2005, Ingram on pastry and James in charge of bread.

Although they now live in different cities, they spend a lot of time kicking around ideas on Instagram. It was there they hatched a plan to bring Ingram and her famous lamingtons – panna cotta-soaked sponge cake layered with raspberry compote and coated in chocolate ganache and shredded coconut – to Melbourne for the day. Lucky us.
