Four Seasons keeps mum on Pei Modern spin-off

Mark Best's bistro spin-off Pei Modern is ripe for a Sydney launch despite protracted silence from the Four Seasons Hotel on talk it will open at the site of its Michael McCann-designed restaurant, the Woods.

Four Seasons courted Best and the decision is believed to have gone to its corporate team. Again, word is they want Best. "There's no update on the Four Seasons. I'll keep you posted in regards to Pei Sydney," Best told Good Food.

Speculation is that Best is keen to time a Sydney run to suit his Pei Modern Melbourne leaders, chef Matt Germanchis and maitre d' Ainslie Lubbock, winner of The Age Good Food Guide service excellence award.

"Matt and Ainslie would be part of any opening team," Best says.
