Fraser Short expands into Manly

Manly's rating as a Sydney hospitality stock is inching further into blue chip territory with Fraser Short set to open a rooftop venue and a separate 300-seat Japanese rock'n'roll bar in the beachside suburb.

The publican-restaurateur will open Daniel-san, the moniker a homage to The Karate Kid film franchise, and the rooftop Dojo at Daniel-san, in late August, after striking a deal to go into Manly's fabled Manly Pacific hotel.

"The rooftop, with its elevated position and views, is probably the best spot in Manly," Short says.

It has certainly been a bull market for the suburb, with a run of cool small bars and restaurants opening. Justin Hemmes has opened Papi Chulo at the wharf, and the team at The Boathouse Palm Beach is set to reboot the Le Kiosk site at Shelly Beach. Short hasn't wasted any time building a new empire since splitting with Keystone Hospitality.

After opening the Morrison in the city, with Astral's Sean Connolly in the kitchen, he partnered with Arthur Laundy on a mega $30 million deal to snap up the Watsons Bay Hotel, a landmark Sydney venue that the duo have since polished and relaunched.
