With chef Adam Wolfers having recently pulled up stumps at the Etelek pop-up in the former site of Gastro Park at Potts Point, news of his next move has been eagerly awaited. Wolfers, who has passed through the kitchens at Monopole, Marque and est., is skipping out of Sydney. The chef says he's headed to Gerard's Bistro in Brisbane, joining mid-May as its new executive chef. And what can Brisbane expect? "The use of many different spices and ferments throughout the food is something that is close to my heart. We want to show how diverse Middle Eastern food is by exploring ideas and flavours from these regions," Wolfers says.
