Darcy's restaurant had a cameo in Network Ten's Puberty Blues show as the fancy place to dine in 1970s Sydney, but its relaunch as Guillaume on Saturday night will attempt to re-elevate its standing as a sparkler for the 21st century.

Guillaume Brahimi worked with designer Tamsin Johnson on the three-level building. It might be behind schedule, but the chef is a long way ahead of the rebirth of his old digs, the Opera House's Bennelong, which is still searching for an operator.

Sydney loves a new restaurant, so plan ahead. "Saturday nights are already booked out five or six weeks out," Brahimi says.
