Guillaume Brahimi's new restaurant set for August opening

The year's most hotly anticipated restaurant now has an opening date. Guillaume Brahimi will open the doors of his new restaurant - known simply as 'Guillaume' - on August 2.

Work crews have been chipping, rendering and sanding away at the Paddington site, formerly home to the age-old Darcy's Restaurant. Darcy's dated wallpaper and gilded frames have been given the heave-ho in place of furnishings and fabrics from French design house Pierre Frey and glass chandeliers from antique markets in Paris.

The menu promises to stick to the classical French cuisine Brahimi is celebrated for. Some of the classic dishes from Guillaume at Bennelong are also reported to have also made the trek from the three-hatted Opera House restaurant where Brahimi left in a small sea of controversy last year. Paris mash looks to live again.

Kevin Solomon (ex Tetsuya's, est.) has worked with Brahimi for almost six years and been appointed as head chef of the new restaurant. In a move that should please wine boffins, Chris Morrison is returning to the fold as head sommelier. Diners can expect a contemporary list that also tells a narrative history of Australian wine.

Bookings for Guillaume open Wednesday July 9 and can be made two months in advance.

Brahimi was awarded the Vittoria Coffee Legend Award in The Sydney Morning Herald Good Food Guide 2014.
