Jeremy Strode's Bistrode tipped to go Greek

The Sydney restaurant fronted by the late Jeremy Strode will shut its doors and relaunch with a new concept and cuisine.

The Merivale-owned Bistrode CBD enjoyed a stellar run under Strode's watch, and currently holds a chef's hat in The Sydney Morning Herald Good Food Guide.

But Strode's death last month, which rocked the Sydney food scene, was the catalyst for a rethink at the city eatery.

"Bistrode is Jeremy and [wife's] Jane's brand, we are conscious of that … we've made the decision to remove the name and go in a different direction," Merivale chief Justin Hemmes confirmed.

The Sydney restaurateur and bar magnate says the change could come as quickly as "the next couple of weeks" but will depend on the final culinary auditions of its frontrunner chef applicant.

"I have someone in mind, if they deliver it'll happen quickly. It won't be Bistrode level, it'll be more casual, more of a cantina," he says.

Hemmes won't be drawn on the exact cuisine under consideration, but hinted at a shift from Strode's polished Brit-French approach to the Mediterranean.

Word on Sydney's eat streets is Greek is being heavily considered.
