Opening just before Christmas, the late-night restaurant-bar Nieuw Amsterdam is inspired by all things American, particularly New York City. It's the vision of owner Michael Roszbach, the manager at Thai diner Cookie in Curtin House for the last 10 years, who decided it was ''just time to do something on my own''. The name is a nod to Roszbach's Dutch heritage and the original name given to the Dutch settlement on Manhattan Island in the 17th century. Roszbach has appointed chef Nick Stanton (ex-Woods of Windsor) with a menu that takes on ''all the various cultural influences in America including European and South American flavours''. There's a 5am licence at weekends. The bar menu runs till 2am.
