LuMi Bar & Dining is a starter for a late-2014 launch at the site of Ripples at Sydney Wharf, the Pyrmont restaurant that spluttered rather than fired despite its prized waterside location.

Back in January we reported Federico Zanellato, the former head chef at Ormeggio at The Spit, was in advanced negotiations to take the site.

It has taken six months, but the deal is finally across the line. Zanellato confirmed he and Ripples owner Bill Drakopoulos will partner on the LuMi project, which will swing open, after major renovations, in early September.

Zanellato previously flagged its culinary direction as modern Italian with some Japanese influence.
