Manly eatery Papi Chulo a big player

Papi Chulo, the Manly beachhead for Justin Hemmes' northside assault, has opened to huge crowds.

The Manly Wharf newcomer has staggered Sydney restaurant suppliers with the volume of produce its kitchen is ordering.

The interior is the collaborative work of Justin and Bettina Hemmes alongside Kelvin Ho of Akin Creative.

Head chefs Patrick Friesen and Christopher Hogarth are overseen by executive chef Dan Hong. The fruits of that collaboration include smoked maple black- pepper pork belly from the barbecue, as well as Suffolk lamb leg with garlic yoghurt and a dish of sand crabs with green chilli.

The tail end of the Papi Chulo menu dresses up a warm chocolate-chip cookie with vanilla malt ice-cream, butterscotch sauce and macadamia brittle.
