Matthew Evans was once one of Australia's most feared restaurant critics, but the pen will be in other hands when he opens a restaurant on September 2.

"I have my gun licence now," Evans quips when asked about restaurant reviewers. "I guess we'll have to put up photos in the kitchen with devil horns drawn on them," he adds.

The host of SBS-TV's Gourmet Farmer – and a former restaurant critic for The Sydney Morning Herald – Evans is opening the restaurant at his Fat Pig Farm, in Tasmania's Huon Valley. The location was also the subject of his recent cookbook, Summer on Fat Pig Farm.

"It is a proper working farm, the cow that walks past you will provide the milk for your coffee. It's part of the reason why we are just doing Friday lunch only. If we run out of stuff we can't just call [a supplier]," he says.
