Surry Hills Thai restaurant Muum Maam is the latest in a throng of spin-off openings at Barangaroo. The restaurant's owner Suwat "Top" Arayarungroj is quietly building a portfolio of Asian venues in Sydney. Arayarungroj confirmed he has snapped up Darlinghurst favourite Phamish.

"The head chef has stayed on and is now a partner. It'll stay the same," he says of Phamish. Barangaroo is a different story. The just opened Muum Maam has seemingly taken a cue from its waterside location, wrapping Moreton Bay bugs in betel leaves, filling spring rolls with green curry barramundi and rolling out a kingfish carpaccio.

"We're trying to do things a little differently down at Barangaroo. There's a tuckshop lunch menu mid-week, we'll also serve finger food, the sort of smaller dishes you might want with a drink," Arayarungroj says.

"We're introducing some new dishes, a pork hock [with lime dressing and Asian pickles] and a duck curry with crispy taro."
