Coogee is the next battleground for the burger revolution, with the latest arrival in Sydney's burgeoning burger scene set to open next week in the beachside suburb.

The rise of the burger in the harbour city has seen a rash of new venues from toqued chefs, including Warren Turnbull's Chur Burger, the Sean Connolly-fronted Parlour Burger and Burger Project, Neil Perry's foray into the market, which swung open the doors of its first outlet last week at World Square.

Now it's the turn of former Cruise chef Nathan Tillott, who is overseeing a new burger van start-up, which will be parked in the beer garden at Coogee Bay Hotel. "The van has been custom built, the plan is to open next week. The name isn't 100 per cent confirmed but it'll probably be called The Burger Shack," Tillott says.

The chef has imported a smoker so he can put a pulled pork burger on the menu and designed another that pays homage to California's famed In-N-Out burger.

A fried chicken Korean burger with kimchi will also be on the menu. Predictions that new burger outlets will slow in 2015 are evidently off the mark. Turnbull confirmed he'll open the first of his Chur Express outlets in the Sydney CBD early next year.

And Perry has wide eyes for Burger Project's future. "I'd love to have 50 of them in 10 years," he says.
