Noma chef closes Sydney restaurant Silvereye

Bad news, fans of the crunchy red-spot whiting fish skeleton.

Silvereye chef Sam Miller (formerly Noma's sous chef) is going home to England and the austere, deg-only restaurant perched above the Old Clare Hotel is closing its doors for good.

Last service will be August 27, so if you've been hankering after one last serve of baked potatoes cooked in nine different aromas or a perfect fillet of Spanish mackerel, cooked till just pink and wobbly, now's your chance.

Though there are no plans for a replacement in the space as yet, rumours have been floating around town that Singapore hotspot Burnt Ends will take its place.
