Republic Sandwiches and Salads takes attentions off burgers

A posse of Sydney chefs have devoted an unhealthy amount of time retooling the humble hamburger, now the sandwich is getting some of the same attention.

Several attempts have been made with the Reuben, now former Longrain chef Joe Kitsana is displaying an Asian touch between slices of white.

Kitsana has opened Republic Sandwiches & Salads, in the site of the recently closed sandwich shop facing the Republic 2 courtyard, in Darlinghurst. The chicken chilli jam sandwich with basil sauce has become a big seller at the newly opened shop.

"I'm doing schnitzies as well, and I've just made some soft meringue with lemon curd and strawberries for dessert." Because man (and woman) does not live on bread alone.
