Royal Mail alumni team up for new Terre restaurant

One of Victoria's smoothest front-of-house operators, Clinton Trevisi, has joined forces with a past colleague from Dunkeld's Royal Mail Hotel for a promising addition to Mornington Peninsula dining.

Terre Restaurant, at the Tuerong Homestead at Dromana Estate Winery will have Rowan Herrald in charge of the pans and wife Janine Herrald on pastry. Both have just come from Salix and have also worked at Heirloom and Gills Diner.

Trevisi, who since leaving Dunkeld has fronted Terminus at Flinders Hotel and helped out at The Shed at Terindah Estate calls it "a stripped-back approach to restaurant dining" with modern French food.

"We're going for a casual approach; a high-end bistro approach to fine dining," Trevisi says.

Another Royal Mail alumnus, sommelier Jeremy Shiell, has helped put together a short but punchy wine list.

With construction currently underway, they hope to open in the second week of December.
