Create Australia's greatest meal. That was the brief by Tourism Australia for chefs Ben Shewry (Attica), Neil Perry (Rockpool) and Peter Gilmore (Quay), for a gala event on November 14.

The multi-toqued trio team up in the kitchen for the first time for Restaurant Australia's Invite the World to Dinner, a three-course showcase of Australian food at Tasmania's MONA (Museum of Old and New Art).

"This dinner is saying to the world, 'Here is Australian cuisine'," says Gilmore. "We have amazing produce, diverse cultural influences and, through our cooking, we bring a certain spirit of openness, adventure and freedom."

Restaurant Australia is an initiative to promote Australia internationally as a dining destination. Fairfax is a media partner. Details: australia.com/restaurantaustralia.
