Tetsuya Wakuda has already fallen for its charms, now one of Sydney's high-profile restaurant managers is poised to join the Singapore club.
Craig Hemmings, a polished presence on the restaurant floor, from Bilson's to Guillaume at Bennelong, is departing chef Teage Ezard's restaurant at the Star in Pyrmont.
''Craig is going to work in Singapore,'' Ezard says.
Damien Grossiet, who worked for Guillaume Brahimi in Melbourne and Perth and had a brief spell at Uccello, is the new GM at Black by Ezard.
