It's the ice-cream dream team – Billy van Creamy meets Butterbing cookies. Result: the ice-cream sandwich of your dreams.

Brothers Mitch and Alex Wells ditched corporate life to teach themselves to make ice-cream, launching a Billy van Creamy ice-cream van in December 2014 and a bricks-and-mortar shop in Fitzroy North exactly a year later.

They've teamed up with baker Simone Clark, whose butter-cream-filled Butterbing brownie cookie sandwiches have a cult following at Melbourne cafes, to create the BillyBing ice-cream sandwich.

"It is a brilliant meeting of soft gooey chocolate brownie cookies and creamy delicious ice-cream," says Clark. "We can't stop eating them ourselves."

Mitch Wells expects salted caramel, vanilla bean, peanut butter, and choc-mint to be the most popular of their scooped-to-order ice-cream flavours.

The $7 BillyBing will make its debut at Flour Market, a seasonal artisan bake sale, on Sunday, November 27 at Collingwood Town Hall from 9am until it sells out, and at selected events and the Billy van Creamy shop (27 Best Street, Fitzroy North) over summer.
