Quay's John Fink and chef David Thompson are involved in a restaurant opening in Cambodia in October.

But it isn't in an upmarket resort or shooting for the World's 50 Best Restaurants list; Market Kitchen is opening in downtown Battambang, just a couple of hours outside Siem Reap.

It's the latest project by 26-year-old Tara Winkler, the Bondi local who set up an orphanage in Cambodia. Winkler will use the restaurant to train young Cambodians, and she's tapped Australian contacts to help.

The restaurant's head chef is training at Thompson's Nahm restaurant in Bangkok; Rolando Schirato of Vittoria Coffee has donated coffee machines and barista training; and Fink says he'll work at Market Kitchen for its opening.
