Two Birds Brewing and Rockwell and Sons team up in Spotswood

Two Birds Brewing has had several temporary perches since launching in 2011, but having found a permanent roost in Spotswood, owners Jayne Lewis and Danielle Allen are teaming up with Collingwood's Rockwell & Sons on a brewery and food concept. Rockwell co-owner and chef Casey Wall says he'd tell the women, regulars at the Smith Street diner, "Let me know when you buy a brewery. I'd love to do the food."

Two Birds leased a former sheet metal factory at 136 Hall Street, Spotswood, last December and are waiting for the liquor licence to come through so Wall and business partner Manu Potoi can serve food with the same flavours of Rockwell but a different offering, says Wall.

He'll be making his own charcuterie, and the prawn roll from Collingwood "might make the jump cause Jayne loves it." Wall has also planned a few salty snacks, such as gribenes (crisp chicken skins) "to make you drink more". The menu will change regularly to match the beers being served.

Rockwell at Two Birds is expected to begin by the end of June.
