Fancy Hank's Bar-B-Que will be slow-cooking a 60kg Wessex Saddleback pig over coals at the Mercat Cross Hotel this Sunday (prices range from $6 to $10 per 100 grams). There'll also be heads or tails for free pots from noon-3pm. Details: facebook.com/fancyhanksbbq

The Carnivore's Ball returns for a second year on April 4 and 5. Organised by "honorary Texan" Jess Pryles (aka BurgerMary), it's a veritable meatfest, with Rockwell & Sons, Silver Creek Smokers and chef Gavin Baker presenting dishes at Ormond Hall, St Kilda Road ($70 a head). And Burn City Smokers is a new mobile barbecue venture run by hospitality professionals Steve Kimonides and Raphael Guthrie, who have imported a smoker and barbecue from Texas.
