You can now learn ice cream making from Mr Frugii

Canberra's king of ice cream John Marshall aka Mr Frugii has launched ice cream making classes.

Aimed at home cooks, the classes will guide groups through the art of making ice cream - with lots of tasting along the way.

"We'll all gather around and make it together and I'll stop at all the major points from a home ice cream point of view, because that's how I started," said Marshall.

"And it covers more than just ice cream because some people don't have an expensive ice cream maker. So they might want to do semifreddos or parfaits and they may want to do sorbets. So it covers those four main things."

"I'm trying to keep it to 15 people because I don't just want to make a bit of stuff and then we eat it - I want people to learn."

The first course on April 3 unsurprisingly sold out, but there are many more to come. Classes will run on Monday nights at the Frugii Dessert Lab in Braddon, when the store is usually closed. The plan is to run them every eight weeks, but Marshall said he adjust that based on demand.

"The classes are about showing, 'this is what Frugii does'. About reaching out to our clients and giving them a bit more education about what we make," he said.

And in the near future Marshall is also planning 'bean to bar' chocolate courses, showing the process from the cocoa pod right through to the gooey good stuff, including a fool-proof way to temper chocolate.

Courses are $120 per person, which includes some tastings. Dates will be announced on facebook.com/frugii and bookings via john@frugii.com.au.
