Lime and coconut delish

As a child, I would always request lemon delicious pudding for dessert for my birthday. I still do! This is a playful reworking of a timeless childhood favourite. As the song goes, 'You put the lime in the coconut and drink it all up'.

120g soft butter, plus extra for greasing

250g caster (superfine) sugar, plus extra for dusting

zest of 3 limes

6 eggs, separated

80ml freshly squeezed

60g self-raising flour

30g shredded coconut, plus

extra for sprinkling

375ml coconut milk

Preheat the oven to 160C. Prepare a decorative baking dish, about 600ml capacity, by rubbing the inside lightly with the extra butter and dusting with some of the extra sugar. Knock out the excess.

Rub the lime zest into 200g of the sugar, to release the oils.

Cream the butter and zesty sugar using an electric mixer until pale and fluffy. Beat in the egg yolks gradually. Warm the lime juice slightly in a saucepan over low heat, and add bit by bit to the butter mixture until absorbed. Add the flour and shredded coconut. Mix in the coconut milk while the mixer is on low.

Whisk the egg whites until they hold soft peaks, then sprinkle on the remaining sugar and continue to whisk until the mixture is firm but not snowy. Whisk one-third of this egg white mixture into the base mixture, then fold through the rest. Pour the mixture into the baking dish. Sprinkle with extra coconut and a little sugar. Place the dish into a larger baking tray and pour in hot water to come about halfway up the side of the dish. Bake for 25–30 minutes, until golden.

To serve: Serve the delish while still hot with runny cream.
