Ingredients

  • 1 granny smith apple, grated

  • juice of 1 lemon

  • 4 egg yolks

  • 2 cloves garlic, crushed

  • 2 cups (500ml) extra virgin olive oil

  • sea salt flakes and freshly ground black pepper

Method

  1. For a casual meal, serve the goose with Apple aioli.

    Soak the apple in the lemon juice. Blend the yolks in a food processor with the garlic, grated apple and lemon juice. Add half the oil in a thin stream and then the rest more rapidly until emulsified. Season.
