Denmark is one of the world's biggest pork producers, and many of its national dishes centre around that most versatile meat. This simple Danish apple and pork recipe might well be the predecessor for our own roast pork and apple sauce.

Ingredients

  • 1 tbsp vegetable oil

  • 800g pork belly, sliced into 1cm thick slices

  • 1 tsp salt

  • 1 tbsp butter

  • 2 large brown onions, sliced

  • 3 granny smith apples, peeled, cored, halved and very thinly sliced

  • 4 sprigs thyme

  • 4-8 slices of buttered rye bread, to serve

  • dijon mustard, to serve

Method

  1. Heat the oil over medium heat in large saucepan and add the pork belly in a single layer, season with the salt and fry for about 10 minutes, turning regularly until well-browned and crisp. You can cook the pork in batches if necessary. Set the pork aside in a warm oven.

    Without washing the pan, add the butter to the rendered fat in the pan and fry the onions for a few minutes until lightly browned. Stir through the sliced apples and thyme, season well, cover the pan and cook for 15 minutes until the apples are softened. Return any resting juices from the pork to the mixture, stir well and adjust for seasoning.

    Serve the pork with the apple and onion mixture with some buttered rye bread and a dollop of dijon mustard.
