Ingredients
- 4 large apricots (halved, stoned and sliced)
- 2 white peaches (halved, stone removed and sliced)
- 2 tbsp Tia Maria
- 150ml whipped cream
- 4 scoop of vanilla ice-cream
- 1 tbsp honey
- 150ml whipped cream
- 1/2 cup toasted almonds
Method
Place 4 large apricots (halved, stoned and sliced) and 2 white peaches (halved, stone removed and sliced) in a medium bowl. Sprinkle with 2 tbsp Tia Maria, toss gently and set aside for 5 minutes.
Mix 150ml whipped cream and 1 tbsp honey in a small bowl.
Place a scoop of vanilla ice-cream in the base of four (1 1/2-cup-capacity) glasses and top with some of the fruit, then a spoonful of honey cream. Repeat layering with scoops of ice-cream, fruit and honey cream. Sprinkle sundaes with 1/2 cup chopped toasted almonds.
Serve immediately.
