This dish is amazing served in the middle of the table. Open the foil to release the deep, heady, earthy aromas. It's also excellent served as an accompaniment to roast pork or barbecued lamb.

Ingredients

  • 2 celeriac

  • 2 tbsp extra virgin olive oil

  • 1 tbsp unsalted butter

  • 4 cloves garlic

  • 8 sprigs thyme

  • 8 slices prosciutto

  • a pinch of flake salt

Method

  1. Preheat oven to 180°C. Peel celeriac and cut each into large chunks. Place a frying pan over medium heat, add olive oil and butter, then add celeriac and sauté for 2-3 minutes or until it turns a light golden brown.

    Transfer contents of pan to 1 large piece of foil (or 4 smaller pieces), add garlic, thyme, prosciutto and salt. Wrap up parcel/s securely to seal, then bake for 20 minutes until tender and aromatic.
