Try this delicious recipe idea from Luke Mangan drawing on fresh seasonal produce.
4 oranges.
Caster sugar (about 1/2 cup).
1 cup Campari.
1 3/4 cups water.
Mascarpone for serving.
Preheat the oven to 220C.
Use a knife to remove the peel and pith from the oranges. Roll in caster sugar to generously coat and place in a baking dish. Pour over the combined Campari and water and bake for 20 minutes. Remove from the oven and allow the oranges to cool in the Campari liquid.
To serve: Cut into quarters, spoon over some liquid and add a dollop of mascarpone.
