Ingredients

  • 100g butter.

  • 6 ripe but firm peaches.

  • 1 cup caster sugar, plus extra to sprinkle.

  • 4 star anise.

  • 2 cinnamon sticks, snapped in half.

  • 2 vanilla beans, split.

  • 1 cup peach liqueur or dessert wine, such as botrytis riesling.

  • Cream, ice-cream or mascarpone for serving.

Method

  1. Preheat the oven to 160C.

    Melt the butter and roll the peaches (skin on) in it, making sure to coat well. Roll in caster sugar and then repeat this process.

    Place peaches in a shallow baking dish with the spices and vanilla beans. Pour over the liqueur, sprinkle with a little more sugar, cover with foil and bake until soft, about 10-15 minutes.

    Serve the peaches with some cooking liquid spooned over and lightly whipped cream, mascarpone or vanilla ice-cream (optional).
