Ingredients

  • 100g blanched almonds.

  • 1 cup sugar.

  • 2 tbsp water.

  • 6 tamarillos, peeled.

  • 2 tbsp caster sugar.

  • 1/4 cup sweet white wine.

  • Mascarpone for serving.

Method

  1. To make the praline: Preheat the oven to 200C. Place the almonds on a baking tray and roast until golden brown (about 10 minutes).

    In a small saucepan, heat the sugar and water until the sugar dissolves. Bring to the boil then simmer over medium heat until the mixture turns golden brown. Remove from heat, add the almonds and stir through. Pour the mixture on to a piece of greaseproof paper and spread into a thin layer. Allow to cool and harden, then use a sharp knife to cut into four pieces.

    Turn the oven down to 180C. Slice the tamarillos thickly and lay, single layer, in a greased shallow baking dish. Sprinkle with sugar and wine and bake for 10 minutes or until soft.

    To serve, place a piece of praline on four serving plates. Top with warm tamarillo slices and a dollop of mascarpone and drizzle with cooking juices.
