A good barbecue chicken is always a great standby that gets a boost from a tasty homemade salad. This slaw uses kohlrabi and is incredibly refreshing with a bought chook, or some good fish and chips from your local chippie.

Ingredients

  • 3 green onions, finely sliced

  • 1 medium celery stalk, thinly sliced crosswise

  • 900g purple or green kohlrabi, peeled and coarsely shredded on a box grater

  • 1 cup green cabbage, shredded

  • 1 pink lady apple, coarsely grated

  • 1/2 cup parsley, roughly chopped 

  • ¼ cup mint, roughly chopped

  • 3/4 tsp celery seeds, toasted and chopped

  • ½ tsp fennel seeds, toasted and crushed

  • 3/4 tsp sugar

  • Sea salt and black pepper

  • 1/3 cup store-bought aoli

  • 3 tbsp extra virgin olive  oil

  • 3 tbsp apple cider vinegar

  • 2 tbsp wholegrain mustard 

  • 1 free-range barbecue chicken from your favourite shop

Method

  1. Place all the chopped and grated vegetables, apple, herbs and spices in a large bowl then mix through the aioli, oil, vinegar, mustard and sugar until well mixed. Taste for seasoning and serve with barbecue chicken.

    Tip

    If you can't find kohlrabi for the slaw, double the amount of green cabbage and add a julienned green apple for extra crunch.
