Beef brisket and potato hotpot

Instead of adding more pots to the stove to cook potatoes and vegetables, just cook everything in one pot and take it to the table.

Ingredients

  • 1kg beef brisket or stewing beef, trimmed of excess fat
  • 2 tbsp olive oil
  • 2 leeks, finely sliced
  • 2 celery stalks, finely sliced
  • 2 garlic cloves, finely sliced
  • 1 litre hot water or stock
  • 2 tbsp tomato paste
  • 2 bay leaves
  • 1 stick cinnamon (optional)
  • Sea salt and freshly ground pepper
  • 600g potatoes, peeled and cut into chunks
  • 8 baby carrots, peeled, left whole
  • Handful of parsley
  • Extra pepper for serving

Method

Rinse the beef in cold water and cut into three centimetre cubes. Heat oil in a heavy-based ovenproof pan and fry the beef for a few minutes until lightly browned. Add leeks, celery and garlic and cook for five minutes. Add hot water or stock, tomato paste, bay leaves, cinnamon, sea salt and pepper and bring to a gentle simmer, skimming. Cover and simmer gently for two hours. Add the potatoes and carrots, check for seasoning and simmer for a further 60-90 minutes or until tender. Scatter with parsley and pepper and serve with a leafy green salad.
