Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries).

  • 1 tbsp lemon juice.

  • 1/4 cup caster sugar.

  • 300ml cream.

  • 1 tbsp icing sugar.

  • Macerated berries to serve.

Method

  1. Place the berries, lemon juice and sugar in a medium saucepan. Stir and bring to the boil, then turn the heat down and simmer gently, uncovered, for 5 minutes. Remove from heat and cool. Use a hand-held blender or food processor to puree coarsely.

    Place the cream and icing sugar in a large bowl and beat until soft peaks form.

    Stir the berry mixture through the cream gently to create a "ripple" effect. Refrigerate.

    To serve, spoon into bowls and top with macerated berries.
